The Spirit of the Wild Forest Tucked between the mist-shrouded villages of Ruili and Ruifeng, the Ming Ching Coffee Farm is a testament to the harmony between agriculture and the untamed wild. Located at a prime altitude of 1100m, this farm is uniquely positioned near two iconic waterfalls (Qinglong Waterfall and Longgong Waterfall) . These falls don't just provide a breathtaking backdrop; they offer a pristine, mineral-rich water source that is the lifeblood of every coffee cherry harvested here.
A Legacy of Diversified Mastery Farmer Mr. Huang Ming-Ching is a true steward of the land. With over 20 years of experience cultivating premium Alishan tea, bamboo, and sweet persimmons, he understands the subtle rhythms of the Meishan terrain. Unlike traditional plantations, his coffee trees are scattered across protected conservation slopes, growing naturally within the wild forest ecosystem. This "wild" cultivation allows the cherries to mature slowly under the protection of the forest canopy and the constant embrace of morning mists.
The Purity of Water The defining characteristic of this lot is its incredible clarity. Utilizing the farm’s exceptional water quality for the washing process, the beans emerge with a strikingly clean profile. We have applied a medium-light roast to bridge the gap between mountain freshness and rich sweetness. The result is a cup that leads with the honeyed silkiness of persimmon and caramel, blooming into white floral aromas, and leaving a sophisticated oolong tea resonance on the palate.
