Before planting their first coffee tree, the Jian family earned accolades as award-winning oolong tea producers, refining their craft through Alishan’s rich soils and steady mountain mists. Today, those same skills — in fermentation, drying, and terroir expression — shape every bean they grow.
From Tea Fields to Coffee Groves
Transitioning from tea to coffee was a natural evolution for the Jians. Their deep knowledge of shade-growing, soil management, and controlled fermentation translated beautifully to high-mountain Arabica cultivation. At Hong Sing, the team hand-picks ripe cherries, then carefully applies honey-washed processing methods to create smooth, delicate coffees that still carry the floral and fruity signatures of their tea heritage.
The result is a cup that’s uniquely Alishan: clean, lightly sweet, with tropical fruit acidity, floral complexity, and a finish reminiscent of lightly oxidised tea.
